Sage

For seasoning of spreads, sauces, salad spices, butter with aromatic herbs or pastry we can add it directly to the dish. If we want to season meat from the grill, we can mix a little bit of ground sage (possibly with other spices as well) with olive oil and then spread it over the whole meat immediately before serving (for example, veal or lamb chops). Sage is a spice with strong flavour, so it must be used sparingly.
